What creates the taste difference between a red indian curry and a red thai curry?
Seems to me the major ingredient is the same, but the tastes are massively different.
They are totally different! Even the ingredients differ drastically.
Indian curry: garam masala, turmeric, ground cumin, ground coriander...more ground spices.
Thai red curry: galangal, lemon grass, kaffir lime leaves, nam pla (thai fish sauce)...more fresh ingredients are are ground into pastes.
The ingredients are very different. Thai's dont use garam masala or any other Indian spices & Indians dont use any of the Thai ingredients listed above.
